Waipara Hills Waipara Valley Chardonnay 2011

Sourced from our Home Bock Vineyard in the Waipara Valley this is a very fruit driven style of Chardonnay with subtle use of oak. Pineapple and stone fruit flavours combine with smooth buttery notes on the nose and follow through onto the palate. Dry and crisp with an underlying texture to balance the acidity. Serve lightly chilled with a light lunch.

Bud break this year was late September early October followed by a settled and warm spring without any frost set backs. The plants enjoyed good growth. We went into an early flower set, the earlist on our records and alos one of the best. The summer and ripening season were dry and cool. Through the growing season we had 230mm of rain, the hottest month being December with an average temperature of 18 degrees Celsius.
Grape Variety: 
100% Chardonnay
Maturation: 
Once pressd the juice was cold settled for two days, then racked and warmed before going into fermentation in both oak barrels and tanks. Fermentation took avout three weeks, after which the wine was left in full casks and tanks for two months for flavour development. One tank started MLF and was stopped when the flavours were balanced for the blend.

The just was cold settled and racked before fermentation with a selection of yeast strains at cool temperatures (12-15 degrees) for approx three weeks. After fermentation the wine remained on yeast lees and underwent partical malo-lactic fermention. After blending the wine was fined using natural methods and prepared for bottling.

Maturation: 
Each block of fruit was fermented seperately, with a seven day cold soak followed by a seven to ten day ferment. Most parcels were then pressed and settled for two days before either being run to barrels or to a full tank to await MLF later in the year. 30% was aged in barrels, the remainder was in tanks.

Two fruit parcels were used for this wine, both were hand picked and whole bunch pressed. The best juice from this fruit was left to settle naturally and then half was fermented in old oak barrels, while the remainder was fermented in a stainless steel tank, these different methods increased greater complexity and interest in the wine.

This wine is 2/3rds from the 2009 season which was allowed to open and develop, and 1/3rd from the 2010 to add freshness and spark.

We pressed frozen fruit to get the concentrated flavours in this wine, then after a carefully monitored fermentation in tank the wine was racked to a mixture of barrels for maturation. The 2009 was aged in French oak barrels for 14 months and the 2010 was only in barrels for about 3 months.
