The Spring Equinox marks the start of every season with the awakening of the vines at budburst, leading through to the inescapable conclusion at the Autumn Equinox when the vine once again shuts down for the winter.

This wine will evolve over the next 10 years, moving from the delicate fruit flavours and aromas to more complex characters of kero, wax and nuts.

The Spring Equinox marks the start of every season with the awakening of the vines at budburst, leading through to the inescapable conclusion at the Autumn Equinox when the vine once again shuts down for the winter.

Delicate spice, ginger crunch and nashi pear.
Palate: 
Delicate pear and ginger/spice flavours, supported by good weight and viscosity combine to flow through the palate resulting in a lingering, unctuous finish.

Asian pear salad complete with ginger, vanilla beans & baby greens

Maturation: 
Two fruit parcels were used for this wine, both were hand picked and whole bunch pressed. The best juice from this fruit was left to settle naturally and then half was fermented in old oak barrels, while the remainder was fermented in a stainless steel tank, these different methods increased greater complexity and interest in the wine.

A decadent wine with rich sweetness, intense lifted fruit and bold structured acidity. A small amount goes a long way, yet the lingering flavours really get you coming back for another try.

Clover honey, pineapple, wild flowers, nougat and cashews.
Palate: 
Rich, vibrant sweetness hits the palate, then a spectrum of tropical fruit and honey, along with a hit of oak coat the mouth. Finally the acidity catches up and reasserts itself to leave the mouth fresh and wanting more!
Serve: 
Chilled in a small wine glass.
Suggested Food Match: 
Cheddar, blue or aged cheese, or with fresh fruits such as pineapple or rock melon.

This wine is 2/3rds from the 2009 season which was allowed to open and develop, and 1/3rd from the 2010 to add freshness and spark.

We pressed frozen fruit to get the concentrated flavours in this wine, then after a carefully monitored fermentation in tank the wine was racked to a mixture of barrels for maturation. The 2009 was aged in French oak barrels for 14 months and the 2010 was only in barrels for about 3 months.

A lovely dry, textural Pinot Gris made to preserve the characters of the vineyard, yet also bringing in added complexity from the use of older barrels. A wine with finesse and elegance, but with an underlying power and persistence that will see this wine open up in the coming years.

Crushed into press, and left on skins for 3 hours before pressing out. Cold settled for 7 days, before a clean racking and a cool ferment in stainless steel. Stopped at a rich yet crisp balance, then left on lees, cold for several months before racking and warming.

A dry style Pinot Gris with delicate aromas of pear, apple and a touch of fresh ginger. A small portion was matured in neutral oak barrels providing a textural palate with rich and lingering flavours. Over time this wine will open up to show more candyfloss flavours.
