Selectivley hand picked from our oldest Pinot Gris vines from The Home Block Vineyard this is a lovely dry, textural Pinot Gris reflective of the long growing season with added complexity through the use of the older barrels. Apple, pear and wild flower aromas combine with a hint of nuttiness and fresh ginger. Rich texture and fruit sweetness is balanced with acidity with lingering ginger and pear flavours. Serve slightly chilled with rich Asian dishes like Peking Duck.

Maturation: 
A select hand pick from our oldest Pinot Gris vines, whole bunch pressed and cool settled until extremely clear, then cool fermented in old barrels and left un-sulphured for several months to promote flavour development. Only old barrels were used as to impart only subtle oak characters.

Vineyard Region: 
Sourced from selected Hawkes Bay (80%) and Marlborough (20%) vineyards. The vineyards are a mix of well drained clay loam, stony and gravel soils.
Vintage Conditions: 
The season in Hawkes Bay started early with a warm dry summer helping ripen the fruit. Some unseasonable rain provided some challenges later in the season. However, the spread of our sites ensured we were able to pick ripe flavourful fruit.
Grape Variety: 
Chardonnay
Maturation: 
The juice was cold settled and racked before fermentation with a selection of yeast strains at cool temperatures for approximately three weeks. After fermentation the wine remained on yeast lees and underwent partial malolactic fermentation. After blending the wine was fined using natural methods and prepared for bottling.

Mud House Estate The Mound Vineyard Waipara Valley Riesling 2011

A pure, focussed style of riesling. A delicate but lively wine. The grapes were picked at optimal ripeness and were hand harvested and whole bunch pressed. Only the free run juice was cold settled and racked a few days later. The cool fermentation was started with cultured yeast to add just the right amount of freshness and complexity. After fermentation the wines were again cold settled and racked shortly after. The wine was prepared for bottling using natural fining methods.

Palate: 
The front palate shows bright citrus notes which give way to plump flavours of nectarine and honey. The touch of minerality on the finish ties together the lime juice acidity and slight sweetness.

Drinking wonderfully now but will develop nicely for 3-5 years.

Selected from one of our oldest Riesling parcels from The Mound Vineyard in the Waipara Valley this follows in style from the 2010 Equinox Riesling. Displaying aromas of rock melon, fresh granny smith apple, hints of kaffir lime and a touch of clover honey. This wine is wonderfully rich and generous with honey, melon and crisp apple flavours. The texture is rich yet has a crisp freshness. Serve slightly chilled matched with Thai food or fresh dishes with an element of heat.

100% Merlot
Maturation: 
Once harvested, the fruit was brought into the winery where it was de-stemmed into a stainless steel fermenter. The fermentation took ten days, during which it was pumped over twice a day to help extract colour, fruit flavour and tannin. The wine then went through a full MLF in stainless steel before being fined using natural methods prior to bottling.

The Pinot Gris is a South Island blend sourced mainly from our key regions - Marlborough and Waipara Valley. The gravelly soils in the Waipara Valley offer minerality and elegant structure, while the heavier soil sites in Marlborough provide the ripe stone fruit characters and a lovely oiliness to the palate.
Vintage Conditions: 
Our vineyards throughout the South Island were blessed with an exceptional year in 2011 for Pinot Gris. All regions saw bud break in late September followed by a warm spring without frost. Adequate rainfall and warm temperatures meant the shoots grew quickly and flower was earlier than normal. After January the season cooled which allowed for an extended ripening period.

Maturation: 
Our South Island Pinot Gris was harvested throughout the first two weeks in April. Starting with Marlborough on the 4th and finishing in the Waipara Valley on the 14th. Once harvested the grapes were transported to the winery, gently pressed and settled in tank. The warm fermentation started with a handful of selected yeast strains. After the completion of ferment the wine was left to mature on full lees for up to three months to enhance structure and mouth feel. After blending the wine was fined using natural methods and prepared for bottling.

Once pressd the juice was cold settled for two days, then racked and warmed before going into fermentation in both oak barrels and tanks. Fermentation took avout three weeks, after which the wine was left in full casks and tanks for two months for flavour development. One tank started MLF and was stopped when the flavours were balanced for the blend.
