This wine is dedicated to Jean-Luc Dufour who started planting our Waipara vineyards in 1994 and has looked after them ever since; helping us make some wonderful wines, just like the one in this bottle. Mostly machine harvested, cool pressed, settled and fermented in stainless steel tanks. The ferments were stopped when the wine was balance and then left cold and un-sulphured for over a month so the yeast could naturally settle and the flavours could develop.

This wine was solely sourced from our Claim 431 Vineyard in Central Otago. The vineyard's free draining loam soils over schist gravel makes it a natural home for growing outstanding Pinot Noir. The huge diurnal temperature adds to the structure and increases concentration in the fruit.

Vintage Conditions: 
<p>Central Otago was blessed with a top growing season in 2012, after a challenging vintage the year prior. Although the season got off to a slow start with a few early spring frosts, the Bendigo basin basked in intense summer sun over December and January. There was little disease pressure so the fruit reached optimum ripeness with ease - a dream run.</p>

<p>100% Pinot Noir</p>
Maturation: 
<p>The Mud House Estate range is made with minimal intervention to be a true representation of the vintage and vineyard site. The grapes were hand harvested when they reached optimal ripeness then gently destemmed. After a week long cold soak, each parcel was fermented using indigenous yeast and hand plunged to extract the vibrant colour, flavour and delicate tannin structure. The wine was then seperately pressed into a mix of new and old French oak barrels to mature for 12 months. Malolactic fermentation was delayed until the beginning of spring, when we selected the best barrels for the blending and bottling of this wine.</p>

This wine was crafted from fruit which was carefully selected from primarily Marlborough vineyards (94%), with just a touch from Hawkes Bay (6%).

Vintage Conditions: 
<p>The grape growing season in Marlborough started with some rather cool and unsettled weather during flowering, resulting in low crops across all varieties. The cool weather continued through summer and by the start of April we were seriously worried about reaching the ripeness required. But Mother Nature was on our side and although we can't say it warmed up too much, the weather stayed settled with very little rain pressure and we were able to hang out the grapes until it reached full ripeness and flavour. The fruit was harvested in May, almost a month later than usual. The long season produced some intensely concentrated aromatic whites - a far cry from the green acidic berries we were looking for at the start of the season.</p>

Maturation: 
<p>After picking and pressing the individual parcels were tank fermented at warm temperatures. At the end of fermentation, the wines were aged on the yeast less for four months - some parcels were lees stirred in tank to add mouth-feel and generosity. A small portion on this wine undertook full malolactic fermentation to enhance the texture. Prior to bottling, the wine was fined using traditional methods.</p>

The majority of the fruit for this wine was sourced from the Mud House vineyard in the upper Wairau Valley. The remainder is from carefully selected grower vineyards in the Awatere, Ure and Wairau Valleys.

After cold settling, each batch was cool fermented in stainless steel using a variety of cultured yeasts to add complexity to the blend and to retain the fresh fruit characteristics. The cool fermentation lasted approximately 2 weeks and the wine was chilled and racked off yeast lees shortly after. The wine was blended after the completion of fermentation, then carefully balanced and prepared for bottling.</p>

Sourced from our Mound Vineyard in the Waipara Valley this Riesling displays aromas of rock melon, fresh granny smith apply, hints of kaffir lime and a touch of clover honey. Following in style from our previous vintages, the 2012 once again shows the characters associated with Riesling from Waipara. Melon, ginger and crisp apple flavour are dominant while also showing some of the German Riesling influence that this wine is modelled around. Textural, rich yet crisp and fresh. A great wine.

The fruit was whole bunch pressed and cold settled to extract very clean juice, before being cool fermented. The ferment was stopped with cold temperature when it was tasted balanced, then left un-sulphured for several months to develop and open up. No oak was used with this wine.

I love the concentration, integration and freshness that we've achieved. This wine has great poise - balancing the fruit, oak, buttery notes, oily texture and fresh acidity.
