Waipara Hills Equinox Waipara Valley Sauvignon Blanc 2012

This complex oaked Sauvignon Blanc shows aromas of white peach, snow pea, citrus and smoky oak. The palate exhibits a wonderful mixture of smoke, spice, stone fruits and citrus flavours. At first the rich texture fills the mouth, then vibrant acidity comes through leading to a dry finish. This wine has got class, interest and vibrancy, while still being fresh and crisp Sauvignon Blanc. Made more in a French style than what we've become used to in NZ. This wine should continue to delvelop nicely for up to 10 years.

A cool summer delayed the ripening much later than normal. This helped to retain acidity and develop the aromatics. The warm, stable weather in Autumn allowed the fruit to finish ripening and to be harvested in great condition.

100% Sauvignon Blanc
Maturation: 
Fruit from the Mound Vineyard was harvested in the cool of the morning, pressed in the winery and cold settled for two days to obtain crystal clear juice. This was then transferred to French barrels to ferment for 3 weeks. The barrels were topped and stirred for a month to develop palate weight, before being sulphured and matured for another 4 months in barrel.

Maturation: 
The grapes were picked at optimal ripeness and only the free run juice was cold settled and racked a few days later. The cool fermentation was started with cultural yeast, to add just the right amount of freshness and complexity. After fermentation the wines were again cold settled and racked shortly after. The wine was prepared for bottling using natural fining methods.

50% of this wine was sourced from our Estate vineyards in the Waipara Valley, with the remaining fruit sourced from selected growers in Marlborough and Nelson.

Vintage Conditions: 
<p>The grape growing season throughout the South Island started with some rather cool and unsettled weather during flowering which resulted in low crops across all varieties. The cool weather continued through summer and by the start of April we were seriously worried about reaching the ripeness required. But Mother Nature was on our side and although we can't say it warmed up too much, the weather stayed settled with very little rain pressure and we were able to hang out our grapes to full ripeness and flavour. We didnt harvest until well into May - almost one month later than usual. This long season has produced some intensely flavoured and concentrated Pinot Gris.</p>

<p>Once harvested the grapes were transported to the winery, gently pressed and settled in tank. The warm fermentation was started with a handful of selected yeast strains. After the completion of ferment the wine was left to mature on full yeast lees for up to three months to enhance structure and mouth feel. After blending, the wine was fined using natural methods and prepared for bottling.</p>

Sourced from carefully selected Hawkes Bay vineyards. The Hawkes Bay vineyards are situated on clay loam soils, sands and free draining gravels.

Vintage Conditions: 
<p>The grape growing season throughout the Hawkes Bay began with a warm start which resulted in good flowering and fruit set. Cool growing conditions and rain events towards the end of the season provided some challenges, but the spread of our vineyard sites across the region allowed us to harvest the fruit at optimal ripeness and flavour.</p>

Maturation: 
<p>Once harvested, the fruit was brought into the winery where it was de-stemmed into a stainless steel fermenter. The fermentation took 10 days, during which it was pumped over twice a day to help extract colour, fruit flavours and tannins. The wine then went through a full malolactic fermentation in stainless steel before being fined using natural methods prior to bottling.</p>

The fruit for this wine was sourced from carefully selected vineyards in Marlborough. These vineyards are on moderately fertile soil with a mix of stony, sandy loam and clay.

The growing season started with cool and unsettled weather during flowering which resulted in low crops. The cool weather continued into summer however little rain pressure allowed a longer stable growing season, almost one month longer than usual. This produced some intensely flavoured and concentrated aromatic wines.

Maturation: 
Once harvested the grapes were transported to the winery and gently crushed and pressed. The grapes were kept cool and after cold and settling each batch was cool fermented in stainless steel using a variety of yeasts to add complexity. The wines were racked off the lees shortly after fermentation and carefully balanced and blended for bottling.

Mud House Single Vineyard Marlborough Chardonnay, Hungry Hill Vineyard 2012

This single vineyard wine was sourced from Hungry Hill vineyard located in the isolated and largely undiscovered Ure Valley at the Southern edge of the Marlborough Region. After a selective hand harvest, the grapes were whole bunch pressed. The free run juice was settled in tank for 24 hours before being racked to barrel to complete fermentation. The pressings were run straight to barrel on full solids and where they started a natural fermentation. After the primary fermentation the wine underwent partial malolactic fermentation with regular lees stirring.

The Hungry Hill vineyard in the Ure Valley is our most southern valley in Marlborough situated 1 km from the Pacific Coast. The river gravel and lime stone chip soils are unique in Marlborough offering wines of well structured acidity, fine aromatics and minerality. The narrow valley is exposed to cooling sea breezes which moderate the summer temperatures.

The cool weather continued through summer and by the start of April we were seriously worried about reaching the ripeness required. The long season helped to produce some intensely flavoured aromatic whites.
