Whole bunch pressed, then cold settled for two days before racking to barrels and puncheons for fermentation over four weeks. The barrels were topped, left over the winter months, then stirred weekly in the spring to promote texture. The barrels were assessed and the blend fined using traditional methods prior to bottling.
